Day 2: Stuffed jalapenos – perfect low carb / keto snack

Day 2 of my new beginning went swimmingly. I’m getting right back into the swing of things.

Breakfast was Rick’s egg/sausage/cheese bowl. As usual, eggs will be a staple of the plan – especially for breakfast.

2014-01-28 13.17.43Lunch – I had to meet Rick at the airport to return our rental car. That took up nearly 45 minutes of driving time, so I needed a quick, low-carb restaurant. The Senate Diner near my workplace is pretty fast, so we dropped in there.

I ordered two coney dogs with no buns. Delicious as I remembered.

We planned to have leftover marinara sauce on something, so I tried my fake “fettucini recipe.” It’s hardly a recipe, since all I do is trim fettucini-sized pieces from a yellow squash using a potato peeler. Plop the squash on a plate, cover with marinara and cheese and voila!

I’d been meaning to try Lindsey’s stuffed jalapenos for a snack treat. They turned out really good, but they really didn’t taste much like jalapenos. They could have been any stuffed pepper. Maybe I should have left some of the seeds, or more membrane, in the peppers. I mean the filling was great, but I missed having the jalapeno flavor.

I’ll add this recipe to my Healthy Keto, since it’s pretty tasty.

That’s it; made it through day two with no hitches. Already feeling the energy. When I got in the car after work, after a few minutes, Rick said, “Well, you’re in a good mood!”

Was I? I think I had more than the usual energy after a long day at work. Let’s see what happens. On to day three….

Day 8: Finally, a perfect day

And by perfect day, I mean I stayed on plan all day.

We were going to go to the diner, but we were running late, so I opted to throw together a quick omelet and microwaved bacon.

My lunch was a luxury: Rick made me some chicken kabobs (minus skewers) for me to take during the week. He is the most supportive husband a woman could ask for, especially since he actually likes bbw’s (big beautiful women). He knows I want to lose weight, and he does all he can to support me, even going out of his way to think up the plan to make chicken/veggies for my weekday lunch.

So, I reheated the chicken, didn’t have a tortilla as I had planned (too stale), and that was that for lunch.

Snack was almonds.

Dinner was at Albert’s for trivia night. I had the chicken club salad (grilled chicken), and Jim gave me one of his french fries.

Dessert was at home later: an Adkins bar.

Whew. It felt good to be back on track.

Day 3: Successfully dodging the temptations at work

Yesterday was hump day. I started the day with breakfast at home: scrambled eggs with cheese and a side of bacon.

I decided to start acknowledging the successes in each day:

  1. There was a workshop going on at work. I circumnavigated the donut and juice table and went to my cubicle.
  2. On the way to the printer, I passed the Doritos, grabbed my paper and returned to my cubicle.
  3. After a skype meeting with the boss, I ignored the candybar bowl and grabbed a handful of almonds from the can in my drawer.

WHEW. I made it! I may “fail” quite a bit at staying on plan, but I also succeed several times a day/week/month.

I heated up my Indian butter chicken over cauliflower for lunch.

Screen Shot 2013-03-21 at 11.49.27 AMOnce home, around 7pm, I relaxed with my man and a Michelob Ultra 2.5 carb beer. For a snack, I had barbecued pork rinds. I can’t believe it myself. The thought of pork rinds used to make me gag. They weren’t so bad, especially since they are zero carb. I can see this is one of those items I need to buy in bulk from Amazon. In fact, I’m a little disappointed that Amazon no longer offers 3 packs of chili lime almonds. I can only order one pack as an add-on to any $25 order. Bring back the cheap 3-packs, Amazon! I need my daily almonds.

For dinner, I heated a Costco pot roast and made 2 or 3 days’ worth of cauliflower mashed potatoes. It’s good to be prepared!

Day 2: Chicken Marsala in a foil pack

So far so good.

I was running late yesterday morning. I would have gotten to work about 1/2 hour early if I skipped breakfast or stopped for a drive thru McDonald’s breakfast. Hmm. Hardly the way to get back on track. I had really been looking forward to hitting the diner with Rick, but we both hate rushing through breakfast in fewer than 25 minutes.

I hit on the remedy – carryout breakfast from the diner. It’s just a little out of the way from work, so I called ahead and ordered an omelet and bacon. We swooped by to pick it up, and I arrived at work 1/2 hour early, where I relaxed, did a crossword and ate breakfast at my desk.

It was more expensive than a breakfast at home, and a couple of dollars more than a Micky D’s breakfast, but I’ve spent money on worse things. It was a good start to a fresh keto diet day, and I’m glad I thought of it.

Lunch was late – around 2 pm, after an afternoon meeting. I ate 2 Beddar Cheddars and some almonds.

Dinner was a recipe I haven’t posted before: Rick’s chicken Marsala. He makes a quick and convenient dinner in individual foil packets that we can both easily eat as leftovers the next day – or for lunch. He usually sacrifices and leaves the leftovers for my eating pleasure, because he can eat anything, after all.

Day 322: Unplanned Buffalo chicken salad

Total weight loss: 39 1/2 pounds

I cooked 3 scrambled eggs for breakfast and nukes some pre-made bacon. It was quick and I had time to relax before work, although I missed the waitress pampering me.

I ate 2 beddar cheddars and some almonds for lunch in the late afternoon.

After work, we were planning to have Cincinnati chili, but Rick didn’t start cooking the sauce early enough. He was out working on cleaning out the garage and forgot. Oh well. It was almost six, and we made the executive decision to grab something quick. We pass Big Boy on our route, so we went there. I do love that buffalo chicken salad. I have to admit, the time I goofed and ordered it with the regular chicken tenders, it was tastier. However, the grilled chicken is much lower carb and it is good as well.

I ate an Adkins chocolate coconut bar for dessert. Oh, and I drank a glass of red wine. Still on track.

We eat out a lot. It’s just a necessary part of our lifestyle – and something we enjoy. Combining a full-time job and with owning a small business means we are working almost around the clock. After eating at Big Boy, I spent about 3 hours on the computer working on client projects and bookkeeping for our business. Having dinner out is a nice treat between the day job and the evening work.

That said, it really is fantastic that there are so many delicious low carb options in so many restaurants. And if it’there aren’t readily apparent options, there are always choices that come with bun, potato, or tortilla that can be substituted for something better. If that fails, remove and toss the offending carby product.

A coney dog with no bun, a burrito with no tortilla, a burger with no bun, spaghetti squash instead of pasta, cauliflower instead of potatoes – all these options have become second nature to me by day 322. I can do this. Once the weight is off, I can also maintain. Carbs are not a necessary part of my diet. I just need to remind myself of this every now and then. Here’s to “re-losing” that 2 pounds I gained over the past month.

Day 321: Monday trivia and a cheat cupcake

We started our week at the diner. We’ve pledged to only go 2 times a week, and I think Monday morning is the perfect day to start.

I had the omelet and bacon.

For lunch, I heated 2 beddar cheddars at work. In the late afternoon, I ate some almonds.

Dinner was at Albert’s for trivia. I have to say, their chicken club salad is one of the best salads in town. In fact, my trivia team and I agree that ALL their food is really really good. The salad is chock full of ingredients: arugula, cheese, cucumbers, lettuce, tomatoes, really good “real” bacon bits hot off the grill, and of course, the grilled chicken. I gave away my tomatoes and cukes and it still took me about 45 minutes to eat the salad. I’ll take a picture of it next week.

I drink about 4 glasses of water while I’m at trivia. For one thing, although the food is delicious and well cooked, the pop leaves something to be desires. Flat and tasteless. So, since I’m always trying to drink plenty of water, I opt for that in most restaurants in the evening, especially if I start the day at a diner and have pop for breakfast. I really am trying to cut down, even if I only drink diet cola. I just know it isn’t healthy, even tho low carb.

There were 2 birthdays being celebrated last night. I was offered 2 cupcakes, and I caved on the second offer. I ate it. It’s over. ‘Nuff said.

Day 318: Mongolian Barbecue inspires

After the usual breakfast at the diner, I headed off to work. I only needed to work until 1:30 because I worked late a couple of days this week. Rick called and offered to take me to Bonefish Grill for lunch to make up for a “bad vacation weekend” as he called it. It’s true, Thanksgiving Day/birthday was great fun, but driving up north and back in two days, followed by an upper respiratory ailment did make for a short and awful vacation.

But I digress. We stopped by the Apple store to pick up a new battery for my Macbook, then headed to Bonefish Grill. We were both very hungry since breakfast was at 7:30 am. I am not a fish lover, but I do really really like their shrimp tacos. Unfortunately, the sign on the door said they opened at 4!

What to do? Well, if you read the title of the blog, you know the answer. Brandon has been telling me that Mongolian Barbecue is a great place to eat on keto, since they now labeled all their sauces with nutritional content plus offer lettuce for wraps in place of tortillas. We decided to check it out.

I loaded up my bowl with chicken, shrimp, onion slices, and mushrooms. Brandon recommended the Asian black bean sauce. I know beans have carbs, but the label says 1 gram of carbs per ounce. Sounded good to me! I added a bit of garlic and waited for the griller to do his work.

It was very very very good. It was one of my favorite keto dinners to date! Rick liked his alot too. I went for seconds, and didn’t change a thing. It was spicy, nutritious, and delicious. We didn’t take the waiter up on the offer to take a full dish home in a carryout container for only $2.49. I was full and it didn’t appeal to me, but the next day, I rued that decision. It would have made a cheap and delicious leftover meal on Saturday at home. Oh well. Next time.

I do have to say, the only spoiler was trying to roll up a lettuce wrap around a portion of my meal. It was just too soggy to handle. I ate the meal with a fork and ignored the lettuce altogether. I also ignored the bowl of rice. I know it is deceivingly delicious looking. In reality, I didn’t need it as filler to detract from my flavorful dish.

All in all, I would say this is in my top five low carb keto meal choices when eating out. In fact, if I could find that Asian black bean sauce, I would cook this at home in our wok at least once a week. So far, I have scoured Amazon.com and other sites, but many of them have similar looking sauces without any nutritional info. I’ll keep searching.

Day 317: Family trivia night and some boring food

Wow. My fingers slipped on the keyboard, and I accidentally posted 51 instead of 41. I can’t wait to see that number. I have been stuck at this weight for months. Of course, that’s bad AND good. I still have more than 40 pounds off. That’s a bit of success for me.

Yesterday started at the diner, AGAIN. We really will stop doing this, but after some long busy and broke months, we are relishing the free time and the extra cash. Pampering ourselves feels good. And my breakfast is always very low carb.

Sooo, enough rationalizing…we ate at the diner, and I had the omelet and bacon. For lunch, I heated up two better cheddars in the late afternoon. My niece picked me up from work at 6:30 and we headed straight to the bar/grill for trivia at 7. I was really hungry. I hadn’t eaten much and drank a bit of water to hold me over.

I ordered a grilled chicken salad. I had looked at the menu online before going to this new venue. It always pays to be prepared. The salad was extremely boring. Not enough GOOD lettuce (I really having iceberg lettuce in a salad) and there wasn’t much cheese or anything else besides grilled chicken. I made it through the day on keto, but didn’t have very inspiring meals. Let’s hope it gets better tomorrow.

Day 294: Perfect keto day

Monday morning and I started out with an egg/sausage/cheese breakfast bowl lovingly made by my hubby.

Lunch was leftover keto-friendly lasagna.

After work, we went over to the sold house – again – to do ONE MORE load of last minute “junk” from the garage. Rick swept the garage floor, and he just needs to go back tomorrow morning to get about 4 boxes and some leaf bags (filled with leaves). I’ll be soooo sooo glad when we finally close on this house.

 

Dinner was at Albert’s on the Alley, since it’s trivia night. I didn’t get the delicious french fries. sigh. I didn’t eat any of Jo’s pizza. I did get the healthy keto-friendly grilled chicken salad with blue cheese dressing. The salad was just packed with yummy layers of ingredients. It took me more than 1/2 hour to eat it and it hit the spot. I ate one steak fry, courtesy of my trivia pal and coworker, Jim.

Before bed, I read a little and had two 72% chocolate pieces. Daylight saving time plus lots of activity has made us both pretty tired. I’m usually up until 1 am, but last night, we both hit the hay at 9! I was starting to get hungry again, so I think I dodged a bullet by just going to bed.

Day 293: Trying a new chicken piccata recipe

Sunday morning and we decided to stay in for breakfast. It was a chilly, but sunny day and it was nice to eat in our cozy home. I had a leftover egg/sausage/cheese bowl that Rick had made for my Friday breakfast at work. I didn’t get around to eating it, and it was a perfect easy-peasy breakfast for someone who doesn’t love to cook. I ate that while attempting the NYT puzzle. This week’s was a bear!

On to the busy day: we went for one last clean out at the house we sold. I spent the day washing out the fridge, washing floors, vacuuming, sweeping, and for the grand finale: carrying old boxes, paints, and sundry items out of the basement. It was good exercise, but I was achy when finished.

We took a mid-day break at the Del Taco nearby. I wonder if that’s the last lunch I’ll have there, now that the house is sold. I ordered the macho beef burrito and was eating it without the tortilla, when I realized that it had beans in it. The guy taking our order did keep messing up, so I wasn’t surprised. I decided to eat it anyway, since I already had planned to have a cheat lunch due to the addition of 2 churros.

Eating the cheat lunch didn’t stop me from trying out a new keto-friendly dinner recipe. I think I am getting the hang of being balanced about this plan. I used to be so “all or nothing” that I would have just eaten a lot of carbs for the rest of the day since my lunch consumption was far from perfect. After more than 9 months on keto and nearing the 50 pound mark (woohoo!), I have learned to jump back on the wagon right away.

Chicken piccata ingredients include chicken (duh), garlic, white wine, lemon juice, and capers. I added mushrooms to make it similar to the meal I had at Angelo Brothers a few nights ago. Rick kindly shopped for the ingredients, and even cut the chicken and pounded it flat with a mallet. After that, the whole recipe took me less that 20 minutes to complete.

I sauteed the chicken in olive oil and butter, then transferred to a plate. Then I sauteed garlic and mushrooms, added wine and lemon juice, then added capers. I let this simmer.  

I put the chicken back in the pan and simmered some more. Unfortunately, here’s were I goofed up. I decided there wasn’t enough liquid, so I added more wine and lemon juice. I think adding these at the end made the recipe too lemony-flavored. I believe these ingredients need to be set early in the simmering stage so as not to be such a prominent flavor. It was good, but not exactly right.I had some leftover cauliflower mashed potatoes and those made a great side item, since the soaked up the delicious gravy.

All in all, it was pretty good, but I need to work on it. I was tired from a long day, and didn’t feel like cooking, but it was a really nice and quick meal. I’ll attempt it again next week and see if I can get the proportions right, then I’ll post the entire recipe on the blog.
