Day 287: Monday – back to the old grind and trivia night

Well, we did it again. We went to the diner for breakfast. It was another nice relaxing outing before starting the workweek, but we do have to stop. It’s a bit extravagant on our budget.

Breakfast – cheese/onion omelet and 4 pieces of bacon

Lunch – once again, breakfast kept me full well into the afternoon. I was sure to drink lots of water, and I had an almond snack around 2.

I left work by 3:30 in order to get more done on the move before trivia started at 6. We unloaded some of Brandon’s things from the truck, but after that, neither of us felt like going over to the house. Instead, I made a list of grocery items for Rick to pick up and I worked on my computer backups and server issues while he grocery shopped.

I’m trying to plan ahead and make some interesting keto recipes. I want to bring back the sense of excitement that I had when I first started the plan. I saw one idea for making a fake lasagna using spaghetti squash. The recipe called for marinara sauce and it was a little steep in the carb grams for keto. Rick checked out tomato sauces and diced tomatoes. He found diced that were net carb zero! and sauce that had 4g of net carbs (1/4 cup, I believe). The plan is for Rick to make a marinara sauce during the day, and I’ll make the squash and layer up some lasagna after work. Fingers crossed that this turns into something edible!

Back to the journal. For lunch, I brought leftover steak and cauliflower mashed. Ended up that I had about 4 bites of each left in the bowl, so I didn’t eat much. I drank another 2 glasses of water.

I didn’t eat again until trivia at Albert’s, where I ordered my traditional grilled chicken club salad with blue cheese. I haven’t been to trivia for a couple of weeks, and I sure missed this salad. My coworker and trivia team member, Jim, ordered a basket of steak fries. Sigh. I LOVE Albert’s steak fries. I decided to ignore the basket and eat my salad, then see if I was still tempted after eating. By the time I finished, his basket was empty. WHEW!

However, there was also a bucket of Halloween candy on the table. At the very end of the game, temptation overcame me and I ate 2 mini peanut butter cups. I’ll sadly check out the carb count now. . . . .

Well, I may not have been knocked out of keto (if I’m even back in, after eating the churros on Sunday). I’ll have to use a keto strip later to find out where I stand.

That was it for the day. Oh wait. I lied. I ate an Adkins coconut bar while watching The Good Wife.

I do have to comment on something I’ve noticed this week: my pants are getting baggy! (and I only recently achieved going down to this size). And my rings are loose. How annoying, NOT!  KETO IS GREAT!

Day 286: Sunday at home – tacos

We stayed home today. There’s still a bit to do moving out of the sold rental house, but it was a chilly Sunday and we enjoyed taking care of business at home.

Rick and I made separate breakfasts, but ate them together. I grilled some diced onions, added 3 eggs and grated cheese. I microwaved 3 pieces of bacon to go with. The result actually tasted better than a diner breakfast and wasn’t very much trouble to make.

I wasn’t hungry for lunch, and I was busy on the phone chatting with a friend for awhile, then with my son and new daughter-in-law. By the time I was through, it was about 5 pm. I ate some almonds while I worked on some files.

For dinner, we decided to make do with what was left in the fridge. I had a pound of ground round and some low carb tortillas, so I cooked up some tacos, topped with cheese, lettuce and sour cream. They were pretty tasty. It was a big tortilla, so I only ate one.

I had an Adkins chocolate/coconut bar for dessert.

Day 285: Yummy steak with onion blue cheese sauce

Saturday morning breakfast at the diner – cheese/onion omelet with a side of bacon

We worked on emptying and readying the house we  [finally] sold. We packed and cleaned for a few hours. This stuff seems to multiply. Afterwards, we went to Del Taco. I had the usual macho beef burrito and opened up and ditched the tortilla.

My 2 pounds weight loss yesterday morning buoyed my spirits. I’m sometimes tempted to “reward myself” with some kind of cheat meal, but realized it would be better to save that for when I’m not losing, to perhaps shock my body into responding to the diet. So, I didn’t have a cheat meal, but my compromise was eating 1 1/2 cinnamon churros. I have to admit they were good. Now I will look at the carb count…..egad – 21 carbs per churro. So much for being in ketosis. Sigh. So, I had approximately 32 extra grams of carbs yesterday. Not good.

Oh, another tip: carry a “real” fork with you. I carry one in my purse and it comes in handy when I order things like this burrito, or a burger with no bun. I HATE using a plastic fork, and some of those burgers actually break them.

Dinner was legal and delish. Rick grilled steaks. I made the accompanying blue cheese onion cream sauce and some cauliflower mashed potatoes. Before dinner, I cleaned the house, put the tv/pc back in order (the old hard drive had failed), and generally spruced up the place. While cleaning out the sold house earlier in the day, I had grabbed Brandon and Lindsey’s lamp set, which they aren’t currently using, and I put one on each side of our Ansel Adams print next to the table. It looked warm and elegant, so we ate our gourmet dinner using cloth napkins and each had a glass of cabernet. I had one more glass out on the deck [oh, what the heck? I already ate 30+ carbs of churro earlier – bad attitude, I know].

Dessert was the usual choco/peanut butter low carb treat.

Day 283: A really good salad: Big Boy’s buffalo grilled chicken salad

Well, I really enjoyed that early morning breakfast Wednesday, so I made the effort to rise early and try it again. This time, we went to the Senate Coney Island, which is a bustling diner even at 7:30 am. I ordered a cheese omelet, asked them to add grilled onions, and skipped the toast. The side of bacon was enough for me to share with Rick. I topped the egg with sour cream (of course) and called it a meal. The service was fast, the omelet was delish, and the bacon was perfect. No extra hash browns to deal with and I just skipped the toast. We’ll be back.

Lunch was on the run, again. More paperwork and banking to do. This house closing is dragging on, and there are still details to cover and items to move from the house.

chicken-saladWe went to Big Boy. Since this blog is all about honesty, I had a really difficult time deciding NOT to eat carbs. I love BB fish and chips, so that was hurdle one. I was tired, stressed and hungry (too hungry), so my decision making processes were hampered by the need for some comfort food. I had tried the buffalo chicken salad a while back and decided to try that. The spiciness might make me feel like I was having some tasty treat, and the blue cheese dressing that comes with would be creamy and fill that need for comfort.

It was a hit! I was a little worried that I made a wrong choice when I saw that the chicken had some kind of coating on it, but at that point, I was eating it no matter what. The tangy buffalo sauce was subtle on the small slices of chicken and blended well with the blue cheese. It was filling and delicious.

Again, I forgot to take a picture, so here’s one that looks similar. I will definitely be ordering this again soon, so I’ll get an authentic one on my next visit.

I looked up the nutrition information when I got home and it passed muster. Without croutons (which I removed), it’s 10.2 grams of carbs minus 2.3 grams of fiber, for a net of 7.9. That’s not counting the blue cheese dressing, but after a really low carb breakfast, I knew I’d be able to stay under 19 for the day. It also looks like they have similar salads at Chili’s and other restaurants.

Bad afternoon – I worked until 6:30. At 5:30, that damned Halloween candy bowl at work called my name. I ate a peanut butter cup and 9 whoppers (actual circles of candy, not packages).  I have no defense. I do think a salad doesn’t stick with me long enough to ward off the temptations. Whatever. I guess I’ll just have to plan ahead in case I’m tempted again tomorrow – drink a lot of water and eat almonds in the late afternoon?

Dinner – home late again. Rick didn’t feel like cooking, so we stopped to pick up a rotisserie chicken. Again, I was tempted. I had already eaten candy, so how about some macaroni salad on the side? NO NO NO. Rick didn’t buy it, and I made cauliflower mashed potatoes instead. Wonder why this is so difficult lately.

Oh, here’s a tip I figured out in the past few months. I really like the cauliflower mashed potatoes, and I really don’t like cooking very much (in case you didn’t figure that out). I now buy small frozen packages of cauliflower and have about 4 on hand. I use the same recipe as I have posted here, but here are the amounts of the ingredients I use with this size package….

Easy peasy cauliflower mashed potatoes – open one bag of cauliflower, pour in bowl, microwave 5 minutes. Put the cauliflower, 3-4 tbsp of cream cheese (definitely less than half a package), and one tbsp of butter into a food processor. The cauliflower should be steaming hot to melt the cheese easily. Process and eat. One package makes a little more than 2 servings. If Rick doesn’t eat his, it warms up well the next day.

Well, that quick recipe was a life savor, and I avoided the carby macaroni salad. I ate about 6 ounces of chicken with the “caulitatoes.” Dessert was 2 squares of chocolate with natural peanut butter.

Day 282: Back in the saddle again

Well, I’m getting back in the swing of things. Here’s yesterday’s recap:

Breakfast – Rick and I went out to a diner! Yes, mid-week, which is highly unusual. We’ve been under a lot of pressure selling our rental house, money leaving our pockets faster than we can make it, working on a few client sites all at once, and then both of us got the flu. usually, I go to bed late, wake up late and shower and fly out the door. On Wednesday morning, I just wanted to relax a bit before rushing off to work.

We went to a diner we hadn’t tried before. The only omelet choices had hash browns and toast with them. They also only had cheese, and I wanted to add grilled onions. I am NOT a morning person, and I had a difficult time conveying what I wanted. The cheese omelet special, add grilled onions. Hash browns also with onions, but to-go (for Rick’s next breakfast). No toast.  Side of crispy bacon. This really perplexed the waitress.

My meal came: a huge plate of cheese and onion omelet, with a giant portion of hash browns and toast and a side of bacon (that was “middling” crispy). SIGH. I ignored the hash browns and toast, and enjoyed the omelet and bacon.

We probably won’t go back. There weren’t a lot of patrons, which is a sign that it isn’t a real popular breakfast spot. It seemed pricy and didn’t have a lot of options. However, my NYT crossword was completely finished in a half hour and I was relaxed and ready to greet the day.

We had some running around and paperwork to attend to on lunch, so I had lunch out, too. This time, we went to Bigg Burger. You know, I’m not a real meat eater, but when you order a burger and the bun is gone, there isn’t much left on the plate. I was really really hungry (breakfast was at 7:30, and by now it was 2:30!). I ordered a TRIPLE cheeseburger, no bun. They have lots of free toppings to choose from, so I chose mayo, grilled onions, and grilled mushrooms. They served up a great-looking presentation and I was really full when done. (where’s the picture? I AM out of the blogging habit – I forgot!). Here’s a simulated picture. LOL. Wait, you KNOW I didn’t eat that bun!

Since I took a long lunch, I didn’t get home from work until late. I was barely hungry after the “pounds” of meat I consumed at lunch, and also didn’t feel like cooking.  I grabbed 4 thin sliced pieces of ham, put about 1 tbsp of cream cheese in the center of each and rolled them up. I tossed some chili lime almonds on the plate and called it a meal.

For dessert, I had 2 squares of 70% chocolate with Smucker’s natural peanut butter on top.

Six months on Keto: thoughts and resolutions

Total weight loss: 35 pounds

For anything to be successful, one needs to look back over the successes and failures to plan for a better future.

Things I’ve learned:

Plan meals in advance

Always have keto-friendly snacks on hand

Always have keto-friendly cooking ingredients on hand

Remember which cheat meals didn’t satisfy

Keep a list of fast food keto-friendly foods in mind

Look at bread, rice, buns, tortillas, pasta, cakes, cookies, donuts, and other high carb food and think negative thoughts: “how pasty looking that is,” “it looks good, but it’ll make me feel lethargic and half-dead after I eat it,” “that rice under Chinese or Indian food, will make me gain, and really doesn’t have much flavor; cauliflower rice tastes just as good”

Even if you eat twice the amount of almonds you’ve planned, it’s still better than potato chips

Cheat meals/days must be thought out VERY carefully. Pick something that will really satisfy you and allow you to keep on the keto plan longer

Drink lots and lots and lots of water

Drinking no-carb alcohol may be okay, but keep it in limits. Over indulging makes me gain water weight and being drunk makes me really tempted to binge on whatever high carb party food is on the table.

There is ALMOST ALWAYS SOMETHING YOU CAN EAT in a fast food place or restaurant. For example, what about chicken marsala in an Italian place?

And there is usually some salad option anywhere you are. Burger joints, just remove the bun.

Mexican and Chinese restaurants give me the most difficulty, because any low carb option is not the reason I would go to the restaurant in the first place.

If you MUST go to a Chinese buffet (I attended a funeral dinner at one), you can find options, but they probably aren’t going to be your favorite General Tso’s. How about the salad bar choices? eggs? the insides of eggrolls, and I even ate the insides only of crab rangoons. Leaves quite a pile of discarded shells on the plate and look like you really waste food.

That’s all I can think of right now, but these ideas have helped me realize the first real weight loss I’ve achieved in more than 15 years! YAY KETO!

Day 167: Sunday working at the rental

Total weight loss: 31 pounds

Sunday breakfast was at a new place: Thomas’s Family Restaurant. I ordered a bacon/cheese/onion omelet. I didn’t order a side of bacon, since it was already in the eggs. I wasn’t thrilled with it. I have realized that I never like an omelet that contains small, hard items. I’ll like my omelets smooth, like my men. (Rick is bald. Bad joke.)

Anyway, the NYT puzzle was pretty simple, the eggs weren’t great….and we needed to rush over to meet the electrician for some more work on the house. It is ALMOST ready for sale.

We worked for about 5 hours, then hit the Del Taco across Telegraph. I ate the usual macho beef burrito, sans tortilla. I did indulge in a churro. I have to look up the carbs, but I know it isn’t good news. (OK, I just looked: 21 grams of carbs. An entire day’s worth, but much better than I feared.)

We didn’t get home until around 7. Dinner was chicken kabobs (without skewers). I had mine on a huge low carb tortilla. It was really filling and delicious.

Dessert was two squares of 79% chocolate with natural peanut butter.

Day 160: Sunday – another birthday party

Total weight loss: 25 1/2 pounds

We had our typical Sunday morning breakfast. I ordered a 3-cheese omelet with a side of bacon and enjoyed my NYT puzzle. I wasn’t hungry at lunchtime, so I just had a no carb cookie snack.

Dinner was a party at my niece, Marsha’s, house. I ate a brat, and some of her delicious buffalo chicken dip. It’s that dip that tastes like chicken wings, with spicy buffalo sauce. I just eat it on my plate with a fork. Who needs chips for dipping?

I caved in to my craving for bean dip and had about a tablespoon on three tortillas. All in all, I did okay and made it through another party without giving into the carb monster.

 

Day 157: Oops…a margarita foils my day

Total weight loss: 29 1/2 pounds

The day started off well enough, yogurt for breakfast, almonds for a snack.

For lunch, I had a warmed up KFC breast* [please see this comment] and decided it wasn’t enough. (I told you, I’ve been hungrier than usual lately. I decided to have another of my patented BLS on a tortilla. Oops, however, I forgot to bring the tortillas to work. Sigh, okay, I have now invented a different version of the bacon, lettuce, and spinach. This one is in a bowl. And it’s MUCH healthier than a KFC bowl!

I forgot to mention that I made up a pan of “baked bacon” earlier in the week, so I’ve had plenty on hand when I need it.

Thursday night is family trivia night. We play at different bars each week, and this week we were going to play at 9 pm at Applebee’s. I knew I would be starving by 9, since lunch was at 1 pm. After work, Rick and I went to US 12 for some drinks and appetizers. I had Absolut and Diet Coke with steak bites….doing great on the carbs so far.

Then I went to Applebee’s. They have this special omn Margarita’s. I said, no. Then I watched my niece Marsha drinking hers and it looked soooo good. I ordered one, then, instead of a healthy choice, I ordered the cheesy artichoke dip with chips. It wasn’t great. Why oh why do I never learn? If I’m going to cheat on carbs, I should plan it carefully and not waste my time eating something that is less that heavenly. All in all, the margarita was good; the appetizer wasn’t great. I wish I had just stuck to fajitas and water like I did the week before.

Day 146: Catching up

Total weight loss: 29 1/2  pounds (Gained 2 in Saturday’s weigh-in)

I’ve been remiss in keeping up my blog for the past 2 1/2 weeks or so because life became more complicated, and more depressing.

My father passed away 11 days ago. He was in the late stages of dementia from Alzheimer’s and it was a tough thing to watch. With all the nursing home visits, complicated by my having an upper respiratory infection, plus working a day job, running my web business, and trying to finish up renovating a house to sell, this blog just didn’t make it to my list of essential things to do.

However, I have been keeping to the program throughout. I’ll admit, I was tempted to have some emotional eating binges, but I really only ate carbs the day of the funeral, when I honestly didn’t care whether I ate the bun on a Big Mac, or not!

The day of my dad’s burial, my husband and I left town for an improptu trip to my dad’s house “up north” on Lake Huron. I stayed on the keto program the entire time, bu I did eat an ice cream sundae on a lark on the trip back home 3 days later.

I skipped one weigh-in (the day of the burial), and I think I did eat carbs that morning and during the drive up north, now that I think about it. However, I am pretty proud (and surprised) at how ingrained the keto habit is now. The next weigh day revealed a 2 pound weight gain, but I am still losing size. In fact, I got behind on doing laundry and had nothing to wear a few days ago, so I pulled out one pair of jeans I’ve been waiting to try to fit into, and voila!, they fit!

So, I will get back into the blogging habit now. However, I don’t really record my calories/carbs in myfitnesspal.com much since I can pretty much do this carb calculating by heart now.

Back to recording:

Yesterday was Sunday. I made some eggs with cheese and onion for breakfast. I had about 6 pieces of baked bacon with that.

Lunch was Pizza Hut – the topping from a pan pizza with cheese, sausage, onion, and jalapeno. I had two trips to the salad bar: romaine lettuce, onion, cheese, creamy Italian, and a couple of sunflower seeds on top.

I wasn’t hungry for dinner, due to the late and large lunch, so I had some almonds for a snack, and then Rick and I made some chocolate mousse. Haven’t had that in quite a while.

That’s it for Sunday. It feels good to be back on habit, and great to know that I can keep on the keto plan through good times and bad. I really hope and pray that this is a lifelong habit. I believe after the past 2 1/2 emotionally draining weeks, that the habit is ingrained and I’ll do okay.
