Day 162: Another day on track

Total weight loss: 25 1/2 pounds

Yesterday was another “on-track” day. I think that huge weight loss scared me into keto-compliance. It has been quite a few months since I started this plan, and I really hate going backwards and seeing negative progress (now there’s an oxymoron!). It just seems like I’m wasting my time when I KNOW the plan works, and I dabble in carbs.

I’m also trying to balance that attitude with the one that reminds me that this is a journey, that I’m going to be doing this for a long time until I reach my goal, so I should lighten up and get some balance about it.

Anyway, breakfast at work was yogurt. For lunch, I made 2 beddar cheddars.

For dinner, I thought I’d make something Mexican. That’s my very favorite food, so why not do it in a no-carb fashion and enjoy it as much as I can. I cooked up some taco meat, topped it with cheese, onions, sour cream, and jalapenos, and enjoyed it very much.

Rick made low-carb chocolate mousse for dessert.

Day 155: A busy day and a Burger King whopper

Total weight loss: 29 1/2 pounds

Yesterday was a typical day at work. I had yogurt for breakfast and a BLT for lunch. Okay, it was actually a bacon, spinach and tomato, so a BST. I made the sandwich in a low carb tortilla and add some mayo. It’s delish!

I had some almonds for lunch.

I stopped at Burger King on the way home from work, because we were going to be too busy to make dinner. Last night was pool opening night and my niece and her kids, plus daughter Cindy and the grandkids were all coming to help us take off the 27 foot cover. It went swimmingly!

Anyway, back to BK. I ordered a double whopper with cheese, no ketchup and removed the bun. It was okay, and I was sated. Worked for me! I’m sure there are all kinds of hidden fillers in the meat, and other things that make this a less than perfect choice. However, I’ve learned to adapt to this keto plan and do the best I can.

Day 109: Drinks and appetizers – keto friendly versions

Total weight loss: 24 pounds. Next weigh-in: Saturday, April 28th

FRIDAY!

I started the morning with low carb yogurt, and I had 2 Beddar Cheddar sausages for lunch.

After work, we went searching for a place to relax for drinks and dinner outside. It’s our favorite end-of-the-workweek thing to do. We went to U.S. 12.

I usually order the steak bites, but Rick pointed out the Mexican pizza on the menu, so I decided to try it. The waitress brought a huge 3-tortilla “sandwich” which sat on top of a bed of rice. The meat was some type of stew. NOT, what I ordered!

I was pretty hungry, but the vodka and Diet Cokes were helping a bit.

When I finally received the correct order, the pizza was pretty satisfying. Without the crust, it wasn’t much different from eating shell-less taco salad.

It was a nice end to the week, and I remained under carb count for the day. We had chocolate mousse at home for dessert…keto-friendly, of course!

Day 107: Screwing up, part 2

Total weight loss: 24 pounds. Next weigh-in: Saturday, April 28th

Wednesday started with a low carb yogurt.

I came prepared for lunch, 2 beddar cheddars.

HOWEVER, there were lots and lots of leftover creme-filled donuts from a class at work. I didn’t want to cheat, but I wanted one bad. So I ate the creme out of the center of one and threw the donut away.

It was wasteful (except they were being tossed eventually, anyway) and I don’t know how many carbs it cost me. Have you ever tried to find donut creme in a nutrition chart?

This is the second time in two days that I have done something out of character on this plan. I generally just say no. I wonder what’s going on with me? Okay, my dad is probably dying, and I’m working on another deadline at my day job, plus running my web business, plus finishing up the home renovations with the sale looming (finally!) in the next couple of weeks. PRESSURE! But I’ve been under pressure before and haven’t succumbed to temptation. Hope I do better today!

Day 102: Pizza “Squasherole” – and a bad weigh-day

Today’s weight loss: +2.5 pounds!

Total weight loss: 24 pounds. Next weigh-in: Saturday, April 28th

DAMMIT! Gained again!
Saying I lost 26 and half pounds sounds WAY better than 24. I’m guessing it was the 10 or so alcoholic drinks I had last week. They were no carb, but I think they play with my hydration and loss. I did have that one carb-laden muffin, and I skipped a few meals. All in all, I need to get back on track with some healthy eating.
Yesterday was Friday and the end of a stressful and depressing week. My dad is still in hospital, although he is doing better. Rick and I are also trying to finish up the rental house repairs so we can sell it and recoup our investment. I’m back at work, plus we’ve been doing brochures and business cards for our clients.
Enough complaining…yesterday, I wasn’t hungry for breakfast, again. I waited until around 11 a.m, then had 2 Beddar Cheddar smoked sausages.
After work, we went to see my dad, then went back to Albert’s to have some more drinks on the patio, but this time, I ordered the steak bites with teriyaki sauce. They were good, but the 2 wings with blue cheese dressing that Rick gave me were even better.
We didn’t stay late, since the weather turned overcast and cold. Since I’d only had 2 meals, I was hungry by 8 pm. Rick was eating little pizzas made on English muffins. I couldn’t do that, so I decided to improvise and create a meal that would appeal to my need for comfort food.
I heated a small portion of spaghetti squash, then layered it into a glass dish. I topped it with 1/8 cup of pizza sauce, a layer of grated cheddar/mozarella cheese, then a layer of chopped onions. I topped that with a few dabs of cream cheese and I baked it in the oven with Rick’s pizzas for about 7 minutes at 350 degrees. I think I’ll call it “pizza squasherole.”
It turned out pretty good, not great. I ate about 3/4 of it, then had 2 squares of 70% cocoa bar with peanut butter for dessert.

Day 100: Grilled chicken club salad

Total weight loss: 26.5 pounds. Next weigh-in: Saturday, April 21st

Yesterday was day two of my back to work week. I didn’t feel much like breakfast, so I ate a low carb yogurt.
I had a late lunch of two Beddar Cheddar sausages.
After visiting my dad at the hospital, Rick and I went out for drinks on the patio at Albert’s on the Alley. I had their super-delicious and nutritious grilled chicken club salad with blue cheese dressing. I must say one of the perks of a low carb diet is being able to eat blue cheese dressing. Every other diet I’ve been on it was forbidden. By the way, I could only eat half the salad.
For dessert, Rick made chocolate mousse.

Day 99: Back to work, one bad choice

Total weight loss: 26.5 pounds. Next weigh-in: Saturday, April 21st

Tuesday it was back to work for me. I haven’t been working the keto plan as well as I used to be. I eat too little, I splurged on the wrap yesterday, I went totally off while sick last week, and I’m not planning good, nutritious meals and lunches. Time to get back on track. (I AM losing pounds and inches; however, so that part is A-OK!)

I was up several times in the night because the hospital kept calling to update me on my dad’s condition. Is that an excuse for what followed? Maybe.

I went back to work and started in on meetings and deadlines. I took time to heat my McRick breakfast of eggs, sausage, and cheese. There was a public workshop taking place in the conference room and lots and lots of bagels and large, inviting Dunkin Donut’s muffins for employees and students.

I think you know what happened.

I ate a huge, sugar-topped, chocolate chip muffin.

I was tired, my dad may be dying, I didn’t want to be back at work, blah de blah blah. I ate the friggin’ muffin and relished every bite.

Then the carbs took effect. I was really really tired. Sluggish. Muddle-headed. I felt just awful – physically and psychologically.

An hour or so later, I made 2 beddar cheddars. I felt a little better, but still logey. I looked up the bad news on these muffins here. For a cheat “meal,” it was a really bad choice — 81 net carbs. Sigh.

After work, Rick and I went up to the hospital to see my dad. He didn’t seem as bad as I expected. He may pull through this latest crisis, after all.

We headed home, and I skipped dinner. I wasn’t very hungry and I had lots of phone calls to make. I think in my head I decided to minimize the carb damage by skipping dinner, but I was hungry in a couple of hours. I made a “comfort food” concoction made up of a cup of spaghetti squash and a cheese mixture I threw together: sauteed onions in butter, heavy cream, cream cheese and grated cheese. It was bland, but did the trick.

Tomorrow: BACK ON TRACK!

Day 86: Deli fare

Total weight loss: 21.5 pounds   Next weigh-in: Saturday, April 7th

I skipped breakfast since I was busy and not very hungry. My appetite is definitely waning this week.

For lunch, I ate 2 beddar cheddars.

After work, I had an impromptu hair appointment. I was pretty hungry and we had time to explore Plymouth, so we stopped a little deli. I ordered the chicken caesar chiabbata sandwich with parmesan cheese. Of course, I didn’t eat the bread. It was filling and had nice flavor. I like that I am far more adept at wading through the high carb menu items than I was at the beginning. I can usually find something that is adaptable to the keto plan.

In the evening, I worked on my dad’s paperwork again. This time for about 3 hours. When I was done, I wanted a drink. I had a vodka and Diet Coke out on the deck with Rick. I wasn’t hungry for dinner, so I ate some almonds instead.

After watching some TV, Rick wanted dessert, so I whipped up some mousse.

Day 83: Sunday at work; Del Taco beef burrito

Total weight loss: 21.5 pounds   Next weigh-in: Saturday, April 7th

I spent Sunday morning and evening at work, and the afternoon sorting molding for the Drexel house. FUN.

I skipped breakfast (I know, I know, that’s not good). I wanted to get this book deadline sewed up so I could relax. After working a couple of hours, Rick and I headed to Del Taco, where I ordered the Mucho Beef Burrito, or some such name. Of course, it came in its handy disposable giant tortilla. LOL

Hours later, after working at the rental house and going into my day job to check out the book’s final stages, I finally had some dinner. I heated up 2 Beddar Cheddars with a side of cream cheese.

Later, while watching TV, I had 2 pieces of 70% cocoa chocolate bar topped with organic peanut butter., my unique version of a peanut butter cup.

Before hitting the hay, I looked around for some unique recipes. I came across this interesting blog: theroadfromfattofit.blogspot.com. I look forward to trying out some of these delicious-looking appetizers and meals.

Day 76: Not much intake; lots of activity

Total weight loss: 21.5 pounds   Next weigh-in: Sat., March 31st

Yesterday was Sunday and it was a day of accomplishment.

We stayed home for breakfast, but I awoke with lots on my mind. I still had lots of paperwork to get in order for my dad, I had items to complete a the rental house, I had a messy house, 3 loads of laundry, and George and Beccy coming at 5.

I have been reading alot lately about taking control of one’s life and one thing that stuck out was that I should choose the 3 most important things that need to be done and do them FIRST. I decided that I wasn’t hungry and couldn’t really relax and enjoy my NYT Sunday puzzle over breakfast when all these chores looming over me.

I headed for my desk and knocked off some of the paperwork. I paid some bills. I did some of my own paperwork. I organized a list of what I could accomplish in the day, the week, the month.

Finished with that, I showered and went downstairs to throw in a load of laundry. While there, I found my grout sponge to take with me to the rental. While cooking eggs for breakfast, I put a pot of eggs on to boil and to devil later, and I cleaned the kitchen.

Finally, by one pm, I sat down to enjoy 3 scrambled cheesy eggs with sour cream. I had a leisurely breakfast and finished my puzzle.

I hopped in the truck and went over to finally finish tiling the kitchen and foyer. I had left all the little intricate doorway corners for last.  Then I jumped back in the truck and headed home, where I cleaned the living room and bathroom and vacuumed the whole house. More laundry, then time to make chili cheese dip for our guests.

The dip is okay on a low carb diet: Hormel turkey chili with no beans, cream cheese, and onions. The problem is finding a conveyance to get the dip into one’s mouth. Pork rinds crumble, and it just doesn’t taste that great with cheese chips. I used 3 pita chips but made sure to pile lots of dip on each.

I ate a Beddar Cheddar and had some lime “cheesecake” for dessert. I had eaten so little that I only used up a few carbs. Rick and I made the deviled eggs and I ate them for a late night snack.
