Day 319: Doomsday (er, I mean weigh day)

Total weight loss: 39 1/2 pounds. Sigh.

Yes, I gained 2 pounds. How depressing. I’m over it by now, but it took quite a pep talk  – from myself. Rick chimed in a bit. It could have been worse. I’m doing okay. 39 1/2 pounds is a significant amount. Yada yada. I just hate going backwards. I want to see that 50 pound loss and soon!

So, I went on. I ate well and stayed under carb limit. We had breakfast at home. I didn’t feel like cooking and Rick was already enjoying his newspaper over cereal, so I didn’t ask him to cook for me. Instead, I ate a bowl of leftover taco soup. That finished the pot I made last week, so I’ll be sure to make some more to carry me through the upcoming week.

Lunch was cheese in a low carb tortilla topped with jalapenos.

We worked on the garage a bit. The house we renovated may be sold, but its former contents are still stowed in boxes all over our garage and basement. After that, I did something rare: I went grocery shopping with Rick. I know, I am spoiled. Most people have to go into a grocery store more than one time every few months. However, if the man LIKES it, and I don’t, who am I to insist on accompanying him on such a mundane task. He buys all the food I need for the diet, and has become a real expert on finding the lowest carb foods and ingredients. I just decided to take a quick walk-thru and see if I found any new inspiring foods.

I was craving coney dogs, but didn’t want to eat out again. I headed over to the canned bean aisle and found some canned chili toppings for hot dogs that were only 1 net carb per serving. I’m looking forward to trying them out this week. Other than that, I grabbed some low carb yogurt and some avocados, and we headed home.

Dinner was 2 beddar cheddars.

Day 315: Back to work after the long holiday weekend

Total weight loss: 41 pounds? (I haven’t weighed in weeks – Saturday is D-Day)

I still felt a bit under the weather, but it was time to get back to work. I only have a week of vacation left, and I don’t want to waste it lolling about the house in the winter. I foresee a beach in my future.

Since I had to make the sacrifice of getting out of bed and all, we treated ourselves to breakfast at the diner. I had the onion and cheese omelet. I keep reading that eating the same foods as a habit for each meal is good for you. I hope so, because I do that alot.

Lunch at work was a tortilla with some shredded cheese and a dab of cream cheese. Low-carb tortillas are a pretty good way to stay on keto yet still feel like I’m having my traditional Mexican food. Quick, easy, comfort food, all rolled up in one gooey cheesy tortilla. YUM.

I had some almonds for a late afternoon snack.

Dinner was the chicken with artichoke that I bought from Costco. (I love Costco!) It takes 6 minutes and tastes great with some quick caulitatoes. I know processed food isn’t good for you, but I worked all day, I was tired, and it took less than 10 minutes to have a nice warm meal. So sue me.

Dessert was 2 squares of 70% chocolate (topped with 2 squirts of Reddiwhip! – 1 gram of carbs per 2 tbsp).

 

Day 314: Cozy day at home

After the long birthday/Thanksgiving/trip out of town and back in 3-days, I was feeling pretty poorly. I actually developed a cold and upper respiratory ailment during the weekend, and just did not feel like rushing back to work.  I ended up using a vacation day on Monday and staying home. I didn’t eat much more than a couple of low carb tortillas with cheese, and really don’t have anything to post. I’ll get back into the swing of things tomorrow.

Day 304: Movie night, no cheating

I ate the usual breakfast and had two cheese tortillas for lunch.

It was Thursday, so we did our new usual habit: Thursday night at the movies. We go to the 5 pm showing and get in for $5 each. Usually, we don’t order food at the concession stand, because 1) it’s too pricey and negates the cheap admission fee and 2) there are not a lot of great choices. I guess I could eat a hot dog with no bun, but I’d rather just pass. Last week I failed and ate the nachos. This week, I drank a bit of Rick’s diet cola and had about 6 kernels of popcorn.

Oh, and the movie was pretty good. We saw “Flight” with Denzel Washington.

I was pretty hungry after the movie, but I made it home without any restaurant or fast food temptations. I knew I still had some leftover chicken from Tuesday’s meal, so I heated up a little and had that for a small meal. I didn’t eat any sides with it. It was late evening, and I just wanted something to take care of the hunger, yet not a lot before bed. I know eating alot of processed pre-made foods isn’t great, but it sure hits the spot after working all day.

I know habits are difficult to break, but I’m pretty proud of myself for making it through movie night with no concession treats! I’ll have to think of the movie date as the treat, and ignore the overpriced “overcarbed” junk food that usually accompanies the occasion.

Day 303: Home-made chicken salad

We went to the diner for breakfast, again. I had the usual grilled onion and cheese omelet with bacon.

For lunch at work, I went back to an old stand by. I love Mexican food, and I concocted a simple yummy and quick lunch. Two low carb tortillas (3g each), a handful of shredded cheese in each. This time, I also added 3 dollops of cream cheese, just for the heck of it. I microwaved them (open) for about 1 minute and a half, then added a few sliced jalapeno peppers to each and ate with a sour cream garnish. For some reason, I don’t like the peppers as well when cooked inside the tortilla, so I add them last. Quick, a bit spicy, and low carb. Yum.

I worked late and I was famished, but I didn’t feel like cooking. We passed fast food places and restaurants on the way home, but nothing appealed to me. I really didn’t want a sit-down restaurant meal, but I didn’t want a processed fast food meal, either. As we passed Big Boy, I was tempted to order a buffalo chicken salad to go, then realized that I had all the ingredients at home, and the only cooking required was the chicken tenders. I decided to give it a go.

I thawed a few chicken tenders in hot water, then sauteed them in oil until cooked, then sliced it into smaller pieces. I had one of those big plastic bowls of mixed greens that Costco sells, so I tossed some of that into a bowl, topped with chopped onions and chicken, drizzled buffalo hot sauce on top, then ate the salad with a side of blue cheese dressing. Oh, and I had no crumbled blue cheese, so I used feta instead. It was as delicious – or more – than the restaurant version!


It seems to get easier and easier to come up with quick keto-friendly dishes. I guess when you do something for nearly a year (!), you learn lots of tricks. There is no need to pay $8 or more for the carryout version when this recipe is so easy.

Day 298: Hidden carbs sabotage my meal

Yesterday was Friday. We started the morning at the diner, where I had my usual: cheese and onion omelet with a side of bacon. I was very happy it was Friday, but I knew I had a long day at work ahead of me. Breakfast out was my “pre-treat” to myself.

For lunch, I ate 2 Beddar Cheddars. I had almonds later for a snack.

While I was working, Rick was also working on websites and newsletters. In the afternoon, he cooked up some chicken fajitas and stopped by the grocery store for some low carb tortillas, so I could eat right after getting off work.

I don’t know what I would do without his support. He is supposedly “retired,” but each day is spent working on our web and print design business. He also took care of a million details when closing the house we sold, does the banking, grocery shopping, and most of the cooking. I might cook something twice a week. Anyway, he has been behind me 100% and goes out of his way to buy low carb foods and find me low carb dinner ideas. My husband is one in a million!

So, back to the food diary. I ate 2 servings of the fajitas, and topped them both with avocado slices and sour cream. They were delicious and low carb. The tortillas are just sliced up frozen chicken tenders with a spicy marinade from a bottle. He uses all different kinds, like Lawry’s. Oh my. I just looked at the carb count on the marinade. It says one serving is 4 grams of carbs. Well, that sounds dandy, until I read the details: the bottle contains 24 servings!!! Rick says he uses about a half a bottle, which makes 4 servings when combined with chicken and cut up peppers and onions. That means 12 servings x 4 grams of carbs = 48 total, or 24 grams of carbs if I eat 2 servings, as I did last night. That one meal puts me over carb count for the whole day. Sigh. I guess I’ll have to find some other seasoning for this meal.

There have been a few other incidents like this, where I think I’m eating something just fine, but discover later that the meal was overflowing with carbs. The Taco Bell hot sauce in a packet that Rick adds to my morning egg dish is fine. The Taco Bell verde sauce is not. Guess it pays to be more conscious of those hidden carbs!

Day 297: On again, off again

Thursday started off okay. I went into work a little early, because we were going to a movie after work, and I didn’t want to work too late. I took a homemade sausage/egg/cheese bowl from Rick.

I was working pretty intently, and the next thing I knew it was 1 pm. I put 4 pieces of bacon in a low carb tortilla and warmed it up. Pretty tasty. I followed that with some almonds.

I made the mistake of not eating enough to make it through the movie. I was hungry at 5:30 and bought an order of nachos from the concession stand. It was at least an historical event from the standpoint that I didn’t eat them all! I don’t think I have ever NOT finished nachos, but there were far too many for me to eat knowing how many carbs I was ingesting. And so much for saving money by not purchasing costly concession stand treats.

Next week, I’ll be sure to eat more during the day so I’m not hungry when I get there. The plan worked well for me last week.

I completed an evening of poor decision making by eating a ham sandwich on sourdough bread. Didn’t hit the spot and was a waste of carbs.

The movie we saw was “The Flight.” I don’t want to post any spoilers, but there are a few characters with alcohol and drug issues. I can empathize. Food is still ingrained in my psyche as a means to comfort. I’m proud that I keep getting right back on the plan after small failures, but watching the addicts battle for sobriety reminded me that the keto diet is not just going to solve all my weight issues. Many of my poor decisions with food are caused by ingrained habits, wrong ideas, and emotional decisions that I’ll probably be battling for the rest of my life. And, although I’ve lost the weight a little too slowly for my own satisfaction, I’m happy that I have stayed with it this long, and that I jump back on the plan daily, instead of throwing in the towel after bad decisions.

Today, I enjoyed a pleasant, albeit poor choice of nachos for dinner, but tomorrow is a new day.

Day 286: Sunday at home – tacos

We stayed home today. There’s still a bit to do moving out of the sold rental house, but it was a chilly Sunday and we enjoyed taking care of business at home.

Rick and I made separate breakfasts, but ate them together. I grilled some diced onions, added 3 eggs and grated cheese. I microwaved 3 pieces of bacon to go with. The result actually tasted better than a diner breakfast and wasn’t very much trouble to make.

I wasn’t hungry for lunch, and I was busy on the phone chatting with a friend for awhile, then with my son and new daughter-in-law. By the time I was through, it was about 5 pm. I ate some almonds while I worked on some files.

For dinner, we decided to make do with what was left in the fridge. I had a pound of ground round and some low carb tortillas, so I cooked up some tacos, topped with cheese, lettuce and sour cream. They were pretty tasty. It was a big tortilla, so I only ate one.

I had an Adkins chocolate/coconut bar for dessert.

Day 191: Back in the keto routine

Well, I’m officially back in the routine. I ate no carbs yesterday, and I admit, it was a bit difficult staying true to the diet.

We’re in the midst of the house showing, with some competing bids, and a lot of stress. I worked at home again, and there’s a bit of stress there, too, since the building we work in is smoked damaged and we’re winging it as best we can. The stress, a headache, and being a bit exhausted by too much life, left me tempted to have some comfort food a few times. And by comfort food, you know I mean carbs.

But I didn’t succumb to temptation.

I ate yogurt for breakfast, almonds for snack, and beddar cheddars for lunch – no bun.

For dinner, I chopped up some leftover grilled chicken, put it on a low carb wrap, and added salsa, onion, and sour cream. I followed it with 70% chocolate and peanut butter dessert.

I’m BAAACK on track!

Day 167: Sunday working at the rental

Sunday breakfast was at a new place: Thomas’s Family Restaurant. I ordered a bacon/cheese/onion omelet. I didn’t order a side of bacon, since it was already in the eggs. I wasn’t thrilled with it. I have realized that I never like an omelet that contains small, hard items. I’ll like my omelets smooth, like my men. (Rick is bald. Bad joke.)

Anyway, the NYT puzzle was pretty simple, the eggs weren’t great….and we needed to rush over to meet the electrician for some more work on the house. It is ALMOST ready for sale.

We worked for about 5 hours, then hit the Del Taco across Telegraph. I ate the usual macho beef burrito, sans tortilla. I did indulge in a churro. I have to look up the carbs, but I know it isn’t good news. (OK, I just looked: 21 grams of carbs. An entire day’s worth, but much better than I feared.)

We didn’t get home until around 7. Dinner was chicken kabobs (without skewers). I had mine on a huge low carb tortilla. It was really filling and delicious.

Dessert was two squares of 79% chocolate with natural peanut butter.
