Day 2: Stuffed jalapenos – perfect low carb / keto snack

Day 2 of my new beginning went swimmingly. I’m getting right back into the swing of things.

Breakfast was Rick’s egg/sausage/cheese bowl. As usual, eggs will be a staple of the plan – especially for breakfast.

2014-01-28 13.17.43Lunch – I had to meet Rick at the airport to return our rental car. That took up nearly 45 minutes of driving time, so I needed a quick, low-carb restaurant. The Senate Diner near my workplace is pretty fast, so we dropped in there.

I ordered two coney dogs with no buns. Delicious as I remembered.

We planned to have leftover marinara sauce on something, so I tried my fake “fettucini recipe.” It’s hardly a recipe, since all I do is trim fettucini-sized pieces from a yellow squash using a potato peeler. Plop the squash on a plate, cover with marinara and cheese and voila!

I’d been meaning to try Lindsey’s stuffed jalapenos for a snack treat. They turned out really good, but they really didn’t taste much like jalapenos. They could have been any stuffed pepper. Maybe I should have left some of the seeds, or more membrane, in the peppers. I mean the filling was great, but I missed having the jalapeno flavor.

I’ll add this recipe to my Healthy Keto, since it’s pretty tasty.

That’s it; made it through day two with no hitches. Already feeling the energy. When I got in the car after work, after a few minutes, Rick said, “Well, you’re in a good mood!”

Was I? I think I had more than the usual energy after a long day at work. Let’s see what happens. On to day three….

Yummy new keto snack to add to my arsenal: salt & vinegar almonds

Rick and I went to the movies last night, and I knew enough to prepare by snacking on something before going in. Those concession stands are nothing but a big, expensive, and carb-filled enemy to the keto plan.


I love chili lime almonds and eat them daily as a snack at work. They have often saved me from pigging out on one of the fatty treats that my workplace always has on the snack table. I am a BIG lover of salt & vinegar potato chips, so when I discovered S&V almonds on Amazon a couple of months ago, I started looking for them on the local shelves. I always order in bulk from Amazon, and I didn’t want to take a chance by ordering a whole lot of something that I didn’t like very much. I needed a small taste test first.

Well, Rick found a 1.5 ounce pack at CVS, and they are as good as a handful of salt & vinegar chips. I loved them! I felt like I was indulging in some forbidden treat. Needless to say, I ordered a dozen cans from Amazon this morning. That amount should last me quite awhile, and I’ll always have a nice back-up treat when temptation calls.

 

Day 2: Chicken Marsala in a foil pack

So far so good.

I was running late yesterday morning. I would have gotten to work about 1/2 hour early if I skipped breakfast or stopped for a drive thru McDonald’s breakfast. Hmm. Hardly the way to get back on track. I had really been looking forward to hitting the diner with Rick, but we both hate rushing through breakfast in fewer than 25 minutes.

I hit on the remedy – carryout breakfast from the diner. It’s just a little out of the way from work, so I called ahead and ordered an omelet and bacon. We swooped by to pick it up, and I arrived at work 1/2 hour early, where I relaxed, did a crossword and ate breakfast at my desk.

It was more expensive than a breakfast at home, and a couple of dollars more than a Micky D’s breakfast, but I’ve spent money on worse things. It was a good start to a fresh keto diet day, and I’m glad I thought of it.

Lunch was late – around 2 pm, after an afternoon meeting. I ate 2 Beddar Cheddars and some almonds.

Dinner was a recipe I haven’t posted before: Rick’s chicken Marsala. He makes a quick and convenient dinner in individual foil packets that we can both easily eat as leftovers the next day – or for lunch. He usually sacrifices and leaves the leftovers for my eating pleasure, because he can eat anything, after all.

Day 281: Update on progress, 39 pounds off

Total weight loss: 39 pounds

In case you think I have fallen off the keto wagon, I have not. I have simply been overwhelmed by life and far too busy to blog. There is no chance for me to catch up on my daily progress, but here’s a recap:

When last I blogged, it was on the cusp of my son’s wedding. I blogged just before the celebratory dinners began. For the week or so before/after the wedding, I had cheat meals galore. In fact, I was off the plan.

The next week (the end of August), I started afresh. Before going off the keto plan, I had lost 38 pounds. I weighed myself before starting back on the plan, and was sad to see I had gained 4 pounds during my cheat fest. Sigh, back into the routine I went.

I stayed on the plan through September and October. Each week, I saw slow progress: 1.5 pounds down, .5 pounds up, 1 pounds down, .5 pounds up, etc. etc. No consistent loss or huge drops in my weight, but I did have at least one-two cheat meals or days a week (planned, and unplanned, depending on the week).

At my weigh in last Saturday, all the weight I gained in August was gone, plus one pound – total 5 pounds lost in September and 3 weeks of October. WHEW!

As an added bonus, I am in one size smaller in my work slacks. For some reason (the cut of the pants or whatever), I have not been able to get in a smaller size all these months. In jeans, I dropped a size long ago. Well, whatever the reason, the pants fit, so I must not quit. [bad pun, sorry]

There isn’t much to report from the past week. I have no new recipes or food ideas, and my meals have been somewhat boring, so I will begin my daily meal journal with tomorrow’s blog.

Oh, one thing I do have to report: I’ve had a stupendous amount of energy! From dawn til dusk, I’m going going going, and feel great! I guess a nearly 40-pound weight loss can relieve the body of  a lot of stress. I know if I pick up something that weighs 40-50 pounds, I appreciate how heavy that is.  I think it’s time to work more exercise into my routine. I feel very healthy now, and that will speed up weight loss and make me feel more energetic as well.

Goals – I’d like to get back to more inspirational meals. I’m going to spend this weekend investigating new ideas. I’m also thinking about recording my meals in myfitnesspal.com again and getting more regimented in my intake. I have been estimating carbs based on the fact that I’ve been doing it so long. I’d like to see how much leeway I’ve been allowing myself by not recording every meal in a food calculator.
